coconut macaroons

Apparently all the rage in Paris centuries ago, these cookies are pretty epic.

Coconut Macaroons

I found for them to be a very simple (more simple - believe it or not - than my one-bowl chocolate cake recipe) and great treat to whip up for company or parties.

I also just have to mention that these cookies are extremely low-cal compared to many other sugary sweets. Not that I particularly care, but it does help when your conscience weighs in as you go to grab another 1-2 for taste :).

Without further ado, here's the recipe:

2 2/3 c flaked coconut
2/3 sugar
1/3 flour
1/4 t salt
3 egg whites
1/2 t vanilla

Preheat oven to 325F. Stir all ingredients together in a mixing bowl and drop mixture (teaspoon sized) onto a greased baking sheet. Bake for 20 mins, or until edges are light brown. Bon Appetit! [You can also garnish with chocolate. Melt chocolate and dip cooled cookies until the mix. My preference = dark chocolate.]

30 Days of Creativity - Day 8: Sweet Tooth

My KitchenAid has been lonely. My palette has been craving something sweet. The solution: Cupcakes! I almost made my "go-to" recipe: One Bowl Chocolate Cake, but instead decided to make my cupcakes from a simple yellow cake recipe. The result, you guessed it -- delicious.

30 Days of Creativity - Day 8: Sweet Tooth

Now that it is summer I am eager to try out new dessert recipes. Cakes with ice cream, tarts with fresh fruit...etc. Since we're new to the 'hood we still have to discover all the great farmers' markets and orchards. We are planning to so check me of this over the weekend.

Anyway, a short post from us today. We don't want to delay eating these delights!

Here's the recipe:
Set oven to 375 degrees. Bake 15 minutes or until golden around edges.

Mix:
3/4 c butter
3 eggs
2 1/2 c flour
2 1/2 c baking powder
1/2 t salt
1 3/4 c sugar
1 1/2 t vanilla
1 1/4 c milk (or as I do it: one yogurt and 1/2 c milk)
+ I would have added orange/lemon zest to this if we would have had it at home. Darn!

double delight

double delight

This one goes out to the incredibly crafty & sweet Papersheep. I've added the chocolate chips in with you in mind!

Lately banana muffins* have been my fall back plan. We never seem to be able to eat them all before they start getting overripe. This doesn't bother me in the slightest - it's an excuse to bake! I really like using a banana bread recipe and making muffins. I've found they last longer, stay fresher, and are a much better serving size.

Here's to one of my (many) comfort foods: baked good. Hoorah!

+On an unrelated note, I have to add that I *love* how this photo came out. Our metallic cheese grater was to the right and I love how it's reflection dances across the image. A very pleasant surprise when I took a closer look at the image on the computer. I heart photo surprises!

*This is not the exact recipe I used. I like to add cinnamon & all spice. If you'd like mine, I'd be happy to share. :)
